Looks like you've got the bases of a good Grifter there. With a good clean and a new seat will look pretty tidy.

yeah cotter pins can be hard, we have all gone through it, did your forks come out all right ?

Welcome Andy.... the dreaded cotter pins!!! arrgh we have all had the same problem... I find it easier if you soak in releasing fluid and then using a vice and a long deep socket over the flat end. Then close the vice till it presses the cotter pin out. Another trick is not to take the nut off the cotter pin. Just wind it up the thread and hit with thor's hammer. This way you don't knack the threads or bend it or squash it. If all else fails then it's the dreaded drill out method. Keep up the good work and keep the pictures coming.
